    SWEET POTATO SMOOTHIE

    I can imagine what's going through your mind now when thinking of adding sweet potatoes to a smoothie. Let me just tell you, its absolutely delicious! I made this smoothie once last year after a workout when all I had at home was a small sweet potato, banana and some spinach. Spinach can be omitted in this recipe, I added it only because it's important to have after a long, tiresome workout, as I had today. Sweet potatoes, a great source of vitamin c, vitamin a, magnese, potassium, fiber, and many other vitamins are truly a nutrition packed root vegetable, and can be cooked in so many different ways. I love them roasted, steamed, boiled and mashed, and now, in my smoothies too. Yes, sweet potatoes are a bit sweet, especially if you add a little natural sweetener to them to enhance that flavor. Try this smoothie, it won't let you down!

    Serves 1.

     

    Ingredients:

    1 banana

    1 sweet potato, steamed and peeled

    1 date

    2 handfuls spinach 

    3/4 cup homemade almond milk

    1 tsp ground cinnamon

    1 tbsp almond butter

     

    Directions:

    Add all ingredients into a blender and blend until smooth. Enjoy!
