    SEARED SPICED PINEAPPLE

    Pineapple is always associated with tropical weather, in a beautiful salad with papaya and lime, pressed in a tall glass, or mixed in a smoothie. Pineapple goes well on pizza, but, if you've never had it grilled before, try it now! I had this dish at Hu Kitchen in New York City, and I had to have it each time I went back there. Totally addicted. I decided to recreate it at home for my family, but changed it up a bit by adding a few spices and topping it with coconut shavings, and it really is a perfect and healthy dessert. It's refreshing and warming at the same time.

    Ingredients:

    1 ripe pineapple, peeled and chopped

    1 tbsp coconut oil

    1/2 tsp ground turmeric

    1/2 tsp ground cinnamon

    1/2 tsp ground cardamom

    1/2 cup coconut shavings (unsweetened)

     

    Directions:

    Heat a large pan with coconut oil. Add the pineapple, and top it with the spices. Sear on high heat until the edges start to turn brown, lower the heat, and let cook for a few more minutes. Top with coconut shavings.
