I bought a bottle of freshly pressed carrot juice a few days ago but never ended up drinking it. I'm not a huge fan of carrot juice on its own, so other than mixing it with apple and ginger, I decided to mix it in my oats. I once had oatmeal made with celery juice, and it was so amazing, but I never got around to making it. So I took the same idea and used carrot juice instead. To make these oats even more nutricious, I boiled a small sweet potato and mixed it in with the oats, as well as banana, and almond butter, of course. The carrot juice does stain the oats a beautiful orange color but it didn't give off too much flavor. Sweetened with a bit of honey, this is an amazing breakfast or brunch for you both!
3/4 cup carrot juice
1/4 cup oats (I use gluten free oats)
1 tsp honey
1 tbsp almond butter
1/2 sweet potato, boiled, peeled and chopped
1 banana, sliced
Bring the carrot juice and oats to a boil. Cook for 3-5 minutes, just until the liquid is combined. Mix in honey, top with sweet potato, banana, and almond butter.
