I am sure you have heard of or even made (numerous times, like I have) the MyNewRoots Life Changing Loaf of Bread. It is such an incredible recipe, I can't count how many times I made it. I am not usually the type to take other chef's recipes and recreate them, but I had a great idea with this already incredible recipe. As I love love buckwheat, also know as kasha, I thought I would incorporate it into this bread recipe. Instead of using gluten free oats, I used buckwheat flakes. This give the bread an even more nutty and hearty flavor and it's packed with lots of nutritional goodness. I also changed the nut and seed content in the recipe and it came out just as amazing.
Combine sunflower seeds, flax seeds, pumpkin seeds, buckwheat flakes, chia seeds an psyllium husks in a bowl. In a separate bowl, whis, the water, coconut oil and maple syrup together. Add this to the try ingredients and mix until everything is combined. The dough should be thick. Grease a loaf pan and add the dough into it. Let it rest on the counter for at least 2 hours.
Preheat the oven to 350F. Place the loaf pan in the oven and bake for 20 minutes. Remove the bread from the loaf pan and place it upside down on the rack and bake for another 45 minutes.
Delicious when served with some sweet almond butter or even salty toppings!
