In search of a healthy dessert recipe? Over the past few years, coming up with easy, healthy dessert recipes was not the easiest thing to do! After lots of baking, testing, and a couple of failures, I figured out how to create incredible desserts that are full of flavor, mostly vegan, gluten free, and without any refined sugars. I still do back with eggs on the occassion, as sometimes, flax and chia eggs just don't do the job!
Chocolate mousse is a dessert that just about everyone loves. You'd probably never think of using vegetables when it comes to baking, but I have realized that they are an incredible substitute. The surprise ingredient used in this chocolate mousse is sweet potato. Not only is it my favorite root, it adds its own natural sweetness and soft texture to this mousse. You will have no idea that cream is missing!
Ingredients: 1 small sweet potato 2 tbsp cacao 2 tbsp maple syrup of coconut sugar (or sweetener of your choice)
Directions: Preheat the oven to 400. Roast the sweet potato for about 50 minutes, until its very soft. Remove skins, and let cool, completely. Place sweet potato, cacao and sweetener in a food processor and blend until smooth and combined. Serve with fresh fruits and mint!
Tip: you may also use avocado instead of sweet potato, just as good and nutritious!
