Even though baking has always been my thing, I've actually learned to love cooking, even more. Maybe it's because I don't eat as many sweets anymore, or its the amount of creativity one has with cooking over baking. Baking is usually my go to when I want to de stress (other than yoga), or when we have friends over for dinner. Otherwise, give me a piece of raw dark chocolate and my sweet tooth is satisfied.
Last week we had some friends over and I didn't have much time to bake. I had an overabundance of blueberries and four little dishes so crumbles came to mind on the spot! This is one of the easiest desserts to make as it takes no time, few ingredients, as you can make this gluten free, vegan and sugar free. You can make crumbles using any fruits and you can make a large one too, but sometimes making individual desserts is a bit nicer!
2 cups blueberries
1 cup gluten free oats
1/2 cup almond flour
2 tbsp coconut sugar
1 tsp cinnamon
2 tbsp coconut oil
Preheat the oven to 350F. Place blueberries, 1/4 cup almond flour, 1 tbsp coconut sugar, cinnamon and 1 tbsp coconut oil in a bowl. Mix well. Place in each baking dish. To make the topping, mix gluten free oats, 1/4 cup almond flour, 1 tbsp coconut sugar and 1 tbsp coconut oil well. Crumble on top of the blueberries. Bake for about 35-40 minutes.
