Now that fall is here, and by here, I mean in Switzerland (yes I know it's still summer in LA), my wardrobe and the produce available in the markets has changed! The latter makes me happier. I really love the fall, as I have the chance to start making soups again and using root vegetables, which are my favorite. Lately, I've been waking up super early as I am doing an online nutrition school course of the next year, and I simply love getting things done early and having the rest of the day to test recipes, workout, and work on the blog.I am going to start posting more articles on health and wellness too, because that is a huge part of my site - to learn how to live a healthy lifestyle, and not just by way of eating. I have a couple great collaborations with the blog coming up, and I can't wait to share them with you!
In the meantime, I have been making this smoothie several times a week, because it is seriously addicting. You have to like sweet potato to like this smoothie, and as I am obsessed with it and it seriously fuels my day, it might just be my favorite smoothie that I make!
Sweet potatoes are full of beta carotene (which is converted as Vitamin A into our bodies), Vitamin C, B6, potassium and fiber. They aren't called sweet potatoes for no reason, they are quite a sweet root especially when they are roasted until soft. I made a sweet potato smoothie last winter and then I think I forgot how much I liked it. Last week when I roasted a bunch of sweet potatoes, as I like to have one available for consumption every day, I decided that I would make a creamy smoothie out of one.
I added peanut butter, maca powder, hemp protein powder, chia and hemp seeds, and this drink was seriously so rich, creamy and delicious. You can add half of a banana too for an extra dose of sweetness as well!
1/2-1 sweet potato, roasted until soft
1 tsp maca powder
1 tsp hemp seed protein powder
1 tbsp peanut butter (or almond butter)
1 tsp cinnamon
1 tsp hemp seeds
1 tsp chia seeds
1 cup unsweetened almond milk
Preheat the oven to 400F. Place the sweet potato inside and roast for about 40 minutes, until very soft. Let cool.
Place sweet potato, banana if adding, maca, hemp protein, date, nut butter, chia seeds and almond milk into a blender. Blend until smooth. Top with cinnamon and hemp seeds.
