    Flourless, Grain Free Banana Bread

    Sorry if this title makes the banana bread sound really boring and taste like cardboard...because that is actually not the case!

    Though I am not one to label my "diet," I have been trying to avoid grains for a couple of weeks now as my digestion has been a bit off. I have done this a few times, I guess you can say a bit of an elimination diet, and it helps every time. I am pretty much following a paleo diet, but only for a few weeks. Once I feel that things are back to normal, I will put my quinoa, buckwheat and amaranth back in! That being said, I had tons of way too brown bananas, which I obviously don't ever throw away as they are ideal for smoothies, smoothie bowls, banana bread and even my 3 ingredient pancakes! So as I ventured off to bake some banana bread, I realized that I have ZERO flour left in my pantry! The only amount of flour (which actually happens to be my favorite) that I found tucked away in my fridge was some coconut flour. If you have not baked with coconut flour before, be careful - it is so delicious, but, if not used properly with a correct amount of liquid, it will make your cake super dry and crumbly, and not even pleasant to chew. It absorbs liquid very quickly, so what I like to do is actually mix coconut flour with either another flour of ground nuts. 

    Here we are with a delicious banana bread made with very few ingredients, healthy enough for breakfast, that 3 pm snack or even dessert!

     

    Ingredients:

    2-3 ripe bananas

    1/2 cup almond, peanut or hazelnut butter

    2 eggs or chia eggs (if you want it to be vegan)

    1 tbsp coconut sugar or maple syrup

    1 tsp vanilla extract

    1 tsp ground cinnamon

    1/3 cup coconut flour

    1/2 tsp baking powder

     

    Optional: nuts, chocolate chips, goji berries, chia seeds, flax seeds, hemp seeds (I used goji berries, flax, hemp and chia)

     

    Directions: 

    Preheat the oven to 350F. Line a loaf pan with parchment.

    Mash the bananas and place in a bowl. Add nut butter, eggs or chia eggs, sweetener, vanilla, and cinnamon. 

    In a small bowl, mix the coconut flour and baking powder. Fold in the dry ingredients to the bowl of mashed banana. Mix in your superfoods, and pour batter into the loaf pan.

    Bake for 30-45 minutes.
